Salad – Lettuce / Greens – Spinach, rocket, watercress
Tomato
Cucumber
Peppers
Toppings – Grilled chicken breast
¼ Avocado
Sprinkle with pumpkin and sunflower seeds.
Pepper to taste (No Salt)

Avocado
Avocado is thought of as being an unhealthy option in our diets due to its perceived high calorie content. Avocado provides us with essential fats, ones that our bodies cannot make. We therefore need to eat these fats to allow our bodies to function optimally. They also contain a high number of minerals, which include iron and copper. The copper and iron aid red blood regeneration and prevention of nutritional anaemia, this is a common cause of fatigue and inability to cope with stress. Seeds and nuts are also often mistaken for being high in calories, but again they contain high levels of essential fats. Seeds such as pumpkin and sunflower have an array of Vitamins, A, B, C and D, as well as minerals such as zinc, iron and potassium.
Cold pressed Olive Oil
Fats get damaged when heated and their make up changes, so that the body does not recognise it, making the body work harder to process it and it is more likely to be stored as fat.
Cold pressed olive oil is an essential fat, our bodies cannot make and therefore we need to include it in our diets.
